
Cozy up with a big bowl of this delicious Zuppa Tuscana. It is one of my favorite soups to make and enjoy. I love the rich flavor of this recipe and as an added bonus, its so easy to reheat and enjoy again the next day.
Delicious Zuppa Tuscana Soup
Here is what you need:
1lb mild Italian sausage
8c chicken broth
5-6 medium potatoes
2c fresh baby spinach (or kale)
1 large yellow onion
1c cream or heavy cream
5 slices of bacon
1tbsp minced garlic
1 1/2tsp red pepper flakes
Salt and fresh cracked pepper
Instructions
Cook sausage and red pepper flakes in Dutch oven over medium heat until browned and crumbled (10m). Drain and set aside. Cut bacon into 1/2" pieces and cook in same pot until crispy (10m) - be sure to leave some fat in the pot but you can remove some fat if needed. Add diced onion and garlic and cook until softened (3-5m). Stir in chicken broth and bring to boil. Chop potatoes in small chunks (If you prefer thin slices/disks, I recommend using a Ninja Food Processor to save you a ton of time and give you consistent slices). Add potatoes and cook for 15 minutes. Reduce heat to low, stir in cream, cooked sausage and spinach and cook partially covered for 5 minutes. Add salt and freshly cracked pepper to taste. Enjoy!
Tips from your Top Goose
Bulk sausage is easiest but if you use links, be sure to remove the casing before cutting it up to cook.
If slicing, be sure to peel potatoes before slicing and cooking, otherwise you end up with stringy skins in the soup.
