These delicious Scotch Eggs are breakfast magic on a plate. A soft boiled egg covered with a layer of sausage, breaded and pan fried to golden perfection. A perfect choice for your next brunch!
Scotch Eggs
Here's what you'll need:
Eggs
Mild sausage
Breadcrumbs
Parmesan cheese
Garlic powder
Onion powder
Paprika
Salt & pepper
Canola oil
Cayenne pepper (optional)
Get your water to a hard boil. Gently add your eggs and boil for 7 minutes. Cool slightly and remove shell. While egg is cooking, flatten out your sausage on to parchment or wax paper to about 1/4 inch thick. Gently use the paper to wrap the sausage around the egg. Be careful to seal the edges of the sausage. Mix together breadcrumbs and all of your seasonings. Heat your pan with at least 1/2" of canola oil (more if your pan is tall enough). Roll sausage balls in the breading mixture until completely covered. When oil it hot enough that it bubbles when you drop a breadcrumb in it, set your eggs in the pan and cook each side until sausage is cooked and breading is golden brown (about 4 minutes per side). Lift eggs out and sit on a paper towel for two minutes then transfer to plate. Serve and enjoy!
Tips from your Top Goose
The slightly runny yolk adds a great "dip" for your meal, but if you prefer a harder boiled egg, increase the cook time to 10-12 minutes.
Don't skimp too much on your sausage covering - the sausage will shrink a bit when it cooks and can break and have your egg hanging out (will still taste great but not as pretty!).
