Tips from your Top Goose
I use English cucumbers for this recipe because they have less (and smaller seeds), so you don't have to worry about removing the seeds. Also the meat of the cucumber is firmer and won't be soggy in your sauce/dip.
If you choose to add the mint, I recommend adding it slowly and tasting as you go. It can become overpowering quickly.
To make a chunkier sauce or dip, reserve a portion of the cucumber and finely dice it up, stirring it in with the rest of the ingredients.
If you don't have one, I recommend getting a grater like this one that has the measured container attachment - helps you keep track of your measurements but even better, NO MESS to clean up and you can stick the top on any leftovers to save in the fridge. I absolutely love mine.
