
With a bit of a spin on a chicken noodle soup, this recipe is easy, delicious, and hearty - the perfect soup for your week.
Silly Goose Chicken Soup
Here's what you need:
2 cups chopped chicken (rotisserie will work fine here)
6c chicken broth
2 cans cannellini beans or similar
1c orecchiette pasta
1 large onion (recommend yellow/sweet)
2 carrots
2 celery ribs
3tsp diced garlic
2-3tbsp extra virgin olive oil
1 bay leaf
1tsp dried oregano
1/2tsp cumin
1/2tsp paprika
1/4-1/2tsp cayenne pepper
Salt & Pepper
Instructions
Heat oil over medium heat in preheated Dutch oven. Add onion and carrots and cook 3-4m until softened. Add celery, bay leaf and salt. Cook an additional 5-7m until softened. Stir in garlic, oregano, cumin, paprika, and cayenne pepper and cook for 2 minutes. Add broth, beans and pasta and bring to boil. Lower heat, add chicken and simmer on low for 10m or until pasta is tender. Salt and pepper to taste and serve!
Tips from your Top Goose:
For a thicker soup consistency, take 2 cups of the finished soup and puree it a food processor then return to the soup and stir and simmer for 5 minutes. You can use any pasta here but I recommend orecchiette because of the size and texture. It will hold up and not get soggy.
